ZFS is a filesystem with storage strapped in, and GVirstor is simply a storage virtualizer, so it makes a storage device that appears to be a certain size but isn't really that size. That way, you can start with a 10TB device and slap a filesystem on it, then as time goes by, add real storage behind it while you add data to the file system. All while online.

ZFS can do a lot too, but the requirements are higher for the system, and it's certainly not as simple as gvirstor. There's a place for both of them.
