I recommend Postfix as well. I have tried Exim, Sendmail, hMailServer (a
MS-Windows solution), but I have always come back to Postfix as a great
combination of easy-to-configure, use, and stable.

A friend told me that Courier Mail Server is attractive as a "do all"
solution, but I have no personal experience other than the Courier IMAP
solution, which worked very well.

I highly recommend running Postfix.. It is a very easy to learn and
has lots of advanced features such as being able to authenticate/query
databases (mysql,postgres) or LDAP in addition to the normal stuff.
