SMTP receiver logs

On my machine (VAX, 7.2, TCPIP Services 5.3), each time a remote SMTP agent
connects to my port 25, a new process is created and a new log file created.
This log file contains tons of copyright text and perhaps one or two lines of
actual SMTP logging.

Is this the only possible behaviour for the receiver (one image activation per
connection) ?
Is this the only possible behaviour for the log files ?

If one gets a lot of traffic, this would result in an unmanageable number of
log files, each containing much more copyright text than actual logs.

Is there a way to make the receiver persistent ?
