For me (and I'm a Mac guy, so I know Open Firmware and EFI, but not so
much BIOS) the huge deal is being able to programmatically adjust boot
options. For instance it's no trouble at all to tell a server via SSH
to boot from the network on reboot, but then return to booting from the
hard disk; or to disable one processor on a multi-processor machine; or
to programmatically set a password to prevent booting from CD at 8AM
and remove the restriction at 6PM. It's entirely possible that you can
do this with a PC BIOS, but I don't know of any way.
