Try as many as you can. The availability of the OS itself and, maybe more importent,
of a mentor that can help you with the very first steps will decide which
OS to try.

Openbsd has an excellent FAQ, freebsd is also ok. Some linuzes (if bought) is
supplied with decent paper-documentation.

Solaris and SCO seems less well supported both on hardware and mentoring.
