I picked up a used 7043-140 as an AIX learner. No graphics card. Will
the system automatically look for a terminal on serial 1?

Yes, it will.

What are the serial parameters? I can't seem to find them in the IBM
pdf manuals.

9600 bps, 8n1, no software (xon/xoff) or hardware (rts/cts) flow control.

The thing is, these machines requires a 'real' serial cable with
appropriate pins wired. The normal serial cable used for most UNIX boxes
will not work, as they don't connect at least one key pin.

FWIW - on both my 43P AND B50 I have been using a DB9 "extension"
cable to connect the DB9 on my laptop with the DB9 on the RS6K
machines. This seems to be working perfectly when booting either in
installation and/or service mode as well as normal console mode.

Worth a try if you have one.
