I'm currently building my new server on a spare PIII 450Mhz 128mb ram
and an 80G hdd, (although 8 is fine if you partition it right) with no
drama's.

Yes you can use something like putty to ssh into your server and work on
it remotely, this is what most people do and in fact my main server
hasnt had a monitor attached to it for 6+ months.
