Maintainability, perhaps?
I don't know about postfix, but I know about qm*il[1] and exim[2].
In comparison, configuring sendmail is hairy on a good day, so much
so that without extra software mere mortals cannot be expected to
do configure it correctly. The fact that using the rather arcane m4
language to generate sendmail configurations is an improvement is a
vivid illustration of this observation.
Still, all the box I'm writing on needs to do is kick mail to somewhere
else and no receiving or other things at all, so I just stuck with the
system default, which happens to be sendmail, and with a mostly default
configuration.
[1] I didn't know how quickly to get rid of it. It has serious drawbacks
in all sorts of ways, making it unsuitable for serious MTA use in
todays internet.
[2] Convenient if all you do is, well, ship mail over tcp/ip. It cannot,
like sendmail, be made to deal with things such as bang-path addresses.
