Hi Tim,
I'm not sure about IM's, but if you want to go down the road of the
'big' VoIP technology (SIP), you can use Asterisk as a server
(www.asterisk.org). It runs great on FreeBSD but it's kind of hard to
set up. Make sure you install the special ztdummy driver for FreeBSD,
you need to recompile your kernel for that to set a different timer
setting.
It takes a good while to get your head around Asterisk and SIP but when
you finally get it, you will have a very powerful PABX with lots of
features such as voicemail, integration with the real phone network
through VoIP providers such as Vonage, queues, automatic menu's, call
logging/recording, etc. You can also use Software phones on PC's across
your network or hardware IP phones. For Windows, Mac and PocketPC there
are X-Lite and SJPhone, I don't know about open source clients though I
suspect there will be some. (I only use BSD on my server and OS X on my
desktop)
