I would strongly recommend to make a copy (e.g. with dd) of the FAT
to the harddisk. Then edit the copy, and if you're satisfied, put
it back to the USB disk. This way you can use hexedit.
Of course it's even better to first make a copy of the copy. If you
make a mistake, you can always put back the copy.
