My client has been using sendmail from their UnixWare server to send invoices, AR statements, etc via email. They just changed their mail server to Gmail, which requires SSL. Is this possible, or is there any other way to handle this?

I assume you mean that it requies SSL for 'SMTP-auth', the ability to submit email messages to the host over an encrypted channel. That's mostly built into *clients*, and almost every mail client supports this today, even if you need to recompile. It's also common to use it for IMAP and POP, to protect reader's passwords.

I'm surprised if they require SSL for host-to-host traffic, though.
