Need - 1.
Want - 2.

With 1 controller, the controller (and the cache on it) is a single point
of failure. With 2 controllers the cache is mirrored, and the controller
will failover to the other if it fails.

When configured correctly, a 2 controller 3310/3510 has a stated
availability something like 99.9998% (which equates to, on average, less
than 1 minute of downtime per year).

I've only ever seen one correctly configured 3310 go down, and the fact it
did so was taken so seriously that the design of the relevant component
in the 3310 was changed to avoid any chances of the problem occuring again
- even though it was the first such failure world-wide.

No

Yes, it's been done before. Supported is an interesting one. Officially
I think the rule is that any disks which are visable from 2 hosts must
be managed by some form of software which will stop them being accessed
on both hosts at once (eg, VxVM, Sun Cluster)., but unofficially as long
as you don't try and access the disk at the same time on both hosts then
you _shouldn't_ have any support problems.
