Either the X4140 or X4150 would fit the bill.

If you have a dozen or so users running those memory hungry
applications, the 64GB capacity of these will be worth the cost.

You can always get one of each on eval, but for this application I doubt
you'd notice any difference.

In guess you are right then probable a X2200 M2(2x2.3GHz) with some RAM is perfect for the job.
